A brownie filled with fresh cherries and dark chocolate chunks is a satisfying treat!
I had been thinking about this recipe for quite some time: brownies with fresh cherries and dark chocolate chunks. I was just honestly being lazy because I didn’t want to clean and pit fresh cherries. But alas, I have done it!
I don’t generally prefer fruit with chocolate, but I will make an exception with cherries. They just seem to pair more naturally with chocolate than other fruits, in my opinion.
This is a very moist and flavorful brownie, thanks in large part to including both oil and butter (respectively). Also, dutch-process cocoa tends to lend a more fudgy texture as well.
I felt it was only fitting to add a more solid texture to pair with the softer bite of the cherries, so I also included dark chocolate chunks.
I think the small hassle it took to clean, pit and quarter the cherries was well worth the finished product of these rich and fudgy brownies.

I noticed that testing these with a toothpick isn’t that accurate, as there are chocolate chunks in it, and the toothpicks I tried testing it with were consistently coming out wet. I eventually just took the brownies out of the oven at 30 minutes and hoped for the best. They were perfect! If the edges are hard, they have been baked too long
